Lime Cilantro Chicken

You will need:

    6 boneless skinless chicken breasts
    Salt and pepper
    1/3 cup Lime-Cilantro Dressing

  • Place chicken breasts in a baking dish.
  • Sprinkle with salt and pepper and Lime-Cilantro Dressing.
  • Turn the chicken over several times, so that the seasonings are rubbed in well and cover the chicken completely.
  • You can cover the dish and let it marinate overnight in the refrigerator, or just let it sit for at least 30 minutes.
  • When you are ready to cook, preheat the oven to 350 degrees.
  • Cover dish and bake for about 40 minutes. Just until the chicken is done.
  • Serve the chicken over rice with the juices from the dish spooned over. So simple and so good!


Grilled Portobello Mushrooms

You will need:

    4 Portobello Mushroom caps (whole)
    4 Tablespoons or more of Lime Cilantro Dressing

  • Clean the mushrooms with a damp cloth.
  • Place mushroom caps, top side down, in a glass dish.
  • Drizzle Lime Cilantro Dressing into the cavity of each mushroom cap.
  • Let caps marinate at least one hour (more is better).
  • When you are ready to cook, carefully place the mushroom caps, so as not to spill the dressing, on a medium hot grill!
  • Mushrooms are done when sides begin to soften slightly and the dressing begins to bubble.
  • Carefully remove the hot mushrooms to a serving dish without losing the hot juices.
  • Slice thickly and enjoy!
  • You can do this under a broiler in a baking pan - but the flavors will be changed a bit.

Fresh Vegetables with Lime Cilantro

You will need:

    2 unpeeled cucumbers cut in long strips
    2 red peppers cut in long strips
    2 green peppers cut in long strips
    4 or 5 yellow squash cut in rounds
    4 peeled carrots cut into long strips (or prepared mini carrots)
    1 large red or green pepper (to be a bowl)
    1 bottle of Lime Cilantro Dressing

  • Wash the large pepper, lay it on it's side and very carefully cut an oval "bowl shape" into the pepper.  Leave stem on for decoration and, wash and seed the pepper.
  • Put a dry paper towel into the pepper to absorb the extra moisture and help it to hold its shape.
  • Wash the other vegetables and cut into strips or rounds.
  • When you are ready for the party or the picnic, arrange the vegetables on a tray and put the pepper "bowl" nestled into the center.
  • Fill the "bowl" with Lime Cilantro Dressing and enjoy!
