Positively Smashing Potato Soup

Make delicious chunky Potato Soup just by adding 6 cups of milk to our mix! This soup is so easy and so satisfying!  Be sure to try our "Bonus Meal" recipe using soup that other people might call "leftovers."

Suggested additions to the Potato Soup:

       Ham and Potato Soup - Add diced ham and your choice of cheese, melted into the soup!  Try Cheddar or Swiss!
       Baked Potato Soup - Top each bowl of hot soup with grated cheese, sour cream, bits of bacon and green onions!
       Crab and Corn Chowder - Heat soup, add crabmeat and 1 box of frozen cream style corn!

Potato Ham Casserole - A Bonus Meal to serve 4

1 box (10 oz) frozen spinach
Swiss Cheese 4 to 5 slices
1/2 lb. diced ham
1 to 3 cups prepared Positively Smashing Potato Soup


1 to 2 Tablespoons butter
2 or 3 boneless chicken breasts
6 cups milk
1 pkg. Positively Smashing Potato Soup
1 cup Swiss or cheddar, grated (optional)

  • Put thawed spinach in a clean dish towel, squeeze out all moisture.
  • Layer ingredients in buttered baking dish, starting with spinach.
  • Bake at 350 degrees until browned and bubbly - about 20 minutes. 

Chunky Chicken Soup

  • Cut chicken into pieces.
  • Melt butter in saucepan, add chicken and cook over medium heat for about 2 minutes.
  • Add milk and soup mix to the pan, stirring well.
  • Turn heat to low and simmer soup for about 40 minutes, stirring some.
  • Add cheese, stir until it melts and serve hot!

Clam Chowder

5 to 6 cups milk or cream (less if you want thick chowder)
1 pkg. Positively Smashing Potato Soup
1/2 stick of butter
1 can chopped  clams

  • Put milk in saucepan, on medium low.
  • Add Mix and clams.  Stir well, and simmer for 40 to 45 minutes, until potatoes are cooked and soup is thick and creamy.  Adjust milk to the thickness you like.
  • Serve hot as a meal or as an appetizer.
  • Note:  Set aside enough chowder to use as a Clam Sauce for broiled or grilled fish.  Chowder freezes well.
