Orange Bundt Cake

1 box Morning Muffins
1 stick of butter, melted 
2 eggs
1 1/4 cups of milk, orange juice or water

Sugar topping packet
1/4 cup of orange juice (optional) 

  • Mix all ingredients, including topping, in a bowl with a spoon. 
  • Pour mixture into a well sprayed bundt pan. 
  • Bake cake in a preheated 350 degrees for about 30 to 40 minutes.

When cake is out of the oven, turn onto a serving plate and drizzle 1/4 cup of orange juice over the cake. Let cool before slicing.

Orange Cranberry Tea Bread

1 box Morning Muffins
1 stick of butter, melted 
2 eggs
1 1/4 cups of milk, orange juice or water

  • Mix all ingredients in a bowl with a spoon, mixing well.
  • Pour mixture into small loaf pans. Fill pans about 2/3 full.
  • Bake at 350 degrees for 10 to 15 minutes, depending on size of pan.

Variation: Make round loaves using 3 or more empty soup cans to bake in. Scrub the cans well, dry and spray with a non-stick spray. 

Fill cans about 2/3 full with the batter, set them into the oven on a cookie sheet and bake. The sides of the "bread" will pull away slightly and a cake tester or toothpick in the center should come out clean when the bread is fully baked. 

Let the cans cool slightly before removing the round loaves of bread. Slice and serve the rounds whole or cut in half. Spread the slices with butter, whipped cream or one of the following toppings for a beautifully delicious presentation.

  • Softened butter mixed with chopped mandarin oranges
  • A small dollop of Lemon Almond Cheese Cake Ball or Chocolate Truffle Cheese Cake Ball
  • Cream cheese mixed with a little orange juice
