
Tea Room Scone Mix

1 bag of Tea Room Scone Mix
1/2 cup of chopped dried apricots (or peaches)
1/2 cup of chopped pecans (or walnuts)
1 egg
1/2 cup milk
Pour the mix in a bowl large enough to mix the scones. Add the Apricots and pecans to the dry mix and stir. Add liquid and egg - then mix with a spoon just until a dough forms. Do not over mix! Pat the
dough into an 8 inch circle on a buttered baking sheet. Cut the dough with a sharp round cutter into 8 or 10 individual scones. Brush with a bit of milk! Bake in a preheated 350 degree oven until lightly
browned (about 15 minutes) Serve warm with Lemon Curd!
Susan Lenes, Gourmet Consultant, MS found some Cinnamon Chips at the store (just like the chocolate or butterscotch chips.) She added ½ cup of Cinnamon Chips to our Tea Room Scone Mix and loved the results! Of course you could add mini chips of any flavor, or grated orange rind, or raisins, or chopped dried peaches. The Tea Room Scones are a traditional English recipe, not meant to be the very sweet cake-like scone that is more common in coffee shops in the US. Susan’s Cinnamon Chip idea does add sweetness!
