Black Bean Chili with Chips and Cheese

1 package Black Bean Chili
1 - 15 ounce can of chopped tomatoes
3 cups beef broth 
1 lb of ground beef or turkey
1 cup cheddar cheese grated
Crushed Fritos or corn chips

  • Follow directions on the chili mix using the broth instead of water and the tomatoes instead of tomato sauce.
  • Cook for 30 minutes.
  • To serve - sprinkle the hot bowl of soup with cheese and top with corn chips.

Hot Chili Cheese Dip

1 package Black Bean Chili
1 can tomato sauce (15 oz.)
3 cups water
1 lb. Cheddar or Monterey Jack cheese, grated
1 can evaporated milk (13 oz.)
1 Tablespoon Chipotle Sauce (optional)

  • Make Chili according to directions on package (use meat if you choose.)

  • Add cheese, milk and simmer until cheese is melted.

  • Add Chipotle for more heat and the good smoky flavor of the sauce.

  • Dip will refrigerate for a week. 

  • Serve with corn chips as an appetizer.  Or make Super Nachos by pouring Chili Dip over tortilla chips, chopped tomato and lettuce!

Black Bean Chicken Chili 
A low-fat, fast and deliciously simple meal!

Just put 1 bag of Chili into a pot with 1 to 2 pounds of raw diced chicken breast or thighs. Add one 28 oz. can of diced tomatoes and 3 cups of water. Stir and cook for 30 minutes. Serve it ina a bowl garnished with cheese and sour cream if you want to....or serve the Chili hot over a bed of shredded lettuce!.
